Turn the camera sideways!：カメラを横向きにしてください！
turn は「向きを変える」sideways は「横向きに」という意味なので「カメラを横向きで撮ってください」とか「横向きにしてください」というフレーズです。
「カメラを縦向きにしてください」と言うのであれば Turn the camera upright. や Turn the camera straight up! となりますし、カメラを今の向きと変えてほしいのであれば Turn the camera the other way.「カメラを違う向きに変えてください」と言います。
日常ではあまり使いませんが、カメラの専門的な用語では vertically「垂直に」 horizontally「水平に」という単語も覚えておくと便利です。

Tokoname makes a lot of them, and they are almost all ceramic.：常滑では招き猫をたくさん作っていますが、ほとんどが陶器です。
them は lucky charm のことであり manekineko を指しています。つまり常滑市では招き猫を沢山生産しているということです。「そしてそれのほとんど全部が陶器だ」と言っています。allmost は副詞で all を修飾しています。名詞を修飾しないのでalmost ceramic とはなりません。

［Do you mind if 〇〇（主語）＋ ～（動詞） ?］の型で「〇〇が～したら嫌ですか？」ということで、自分がすることの許可を相手に頼む言い方です。
