I had to remove the existing gs version which was installed as part of my mactex Trying to run brew link --overwrite ghostscript would fail due to permission issues for non-root user and brew doesn't support running as root. So had to manually remove the offending files which were listed by the error shown by brew link --overwrite ghostscript. Overall, I did the following to get it working on macOS Catalina:.
