They both start the same way. First, the inedible hull of the raw oats is removed. This leaves the whole oat groats with germ, endosperm and bran attached. These parts are what contains the fibre, vitamins, healthy oils, and antioxidants that make oats so good for you. Rolled oats are made by steaming whole oat groats then pressing them into flakes with steel rollers.


This changes the texture, shortens cooking time and improves its shelf life. There are three types of rolled oats available in the supermarkets: traditional oats, quick oats and instant oats. Traditional rolled oats or old-fashioned oats. Traditional oats are steamed for a short time and then rolled.


They still have a firm, chewy texture. Eating traditional oats generally keeps you fuller for longer, as it is less processed. They're the best variety to use in baked goods such as cookies, biscuits, muffins and crumbles unless otherwise stated in the recipe. As the name suggests, quick oats cook faster. The grains are steamed for longer and rolled thinner. Cooking time is about 30 minutes, and they will have a chewy texture when ready to eat.


Rolled oats are groats that have been steamed and flattened with huge rollers to form large flakes. These are sometimes called old-fashioned oats or regular rolled oats. They take about 15 minutes to cook. Quick-cooking rolled oats are groats that have been cut into several pieces before being steamed and flattened into thinner flakes.


They cook in about 5 minutes. Rolled oats and quick-cooking oats are often interchangeable in recipes. Instant oats are even smaller pieces of rolled oats, cut finer and rolled even thinner so they cook very quickly.


Steel Cut Oats These are cut into pieces. They are not rolled or steamed first and take longer to cook than old fashioned oats I would avoid substituting one for the other and go with what a recipe specifies as using something different will probably affect the results especially the texture. If you do substitute one for the other keep in mind the texture will be different between each one of the cooking time will be different also.
