Even though tea is delicious, each person has a different sense of taste.
I have my own interpretation of what "tasty" means. Once the taste of tea passes through the throat, it is forgotten. Kitajuzaemon interprets "tasty" as something that makes one's body feel good after eating it.

古くから伝統的に受け継がれてきた宇治緑茶（抹茶）には、深いわけがあると思います。宇治のお茶が戦国時代の権力者にも溺愛されて、育てられてきた理由は、お茶の効能によって、その当時の疫病や、天皇の病気を緩和したことから、歴史的生活習慣が生まれています。そして、茶道文化にまで築き上げられてきました。
Each person is born and raised with a different lifestyle. Some researchers say that any kind of tea is fine.
I believe there is a deep reason for Uji green tea (matcha), which has been traditionally passed down from generation to generation. The reason why tea in Uji was loved and nurtured by the powerful people of the Warring States period is that the tea's efficacy alleviated the plague and illnesses of the emperors of that time, giving birth to a historical lifestyle custom. And it has been built up to the tea ceremony culture.
喜多重左衛門の病気は、難病のカリウム欠病の病気でした。しかし、抹茶にはカリウムを含んでいます。そのおかげで、命が救われた宇治緑茶のためにも自分だけの知恵ではなく社会に還元できるように『健康を考えたサスティナブルな社会』に貢献できるように努力をしています。
Kita juzaemon's illness was an incurable potassium deficiency disease. However, matcha tea contains potassium. We are making efforts to contribute to "a sustainable society that considers health" so that we can give back to society, not just our own wisdom, for the sake of Uji green tea, whose life was saved thanks to it.
安心安全な有機栽培農家の一番の苦労で手を焼く大変なことは、農薬を使用しない代わりに茶畑に生える雑草の処理があります。農薬を使用すれば、草は枯らすことができます。しかし、茶栽培畑に住み着いていた蜘蛛、テントウムシ、ミミズは住処を追われてしまいます。
One of the hardest and most difficult things for a safe and secure organic farmer to deal with is the weeds that grow in the tea fields instead of using pesticides. With pesticides, weeds can be killed. However, the spiders, ladybugs, and earthworms that used to live in the tea fields are forced to leave.
そんなご苦労をお聞きして、喜多重左衛門ができることは、この作業に賛同をされた、学生に声をかけてアルバイトで、草むしりをしていただきました。
若い尽力で、夏の日差しのきつい日に、急斜面を駆け上り、手作業で、草刈りができました。
学生にとっても有機宇治茶畑のお手伝いができた喜びと、宇治の山深い自然に触れられて、土壌には、いろいろな虫が生育している現実を見て、安心安全なお茶であるという感想を述べられていました。
Hearing of their hardships, Kita Shigezaemon did what it could to help. We asked students who agreed with this work to work part time and cut the grass for us.
Thanks to the efforts of these young people, we were able to cut the weeds by hand, running up the steep slopes on a hot summer day.
The students expressed their joy at being able to help with the organic Uji tea farm, as well as their impression that the tea was safe and secure after being exposed to the deep mountain nature of Uji and seeing the reality of various insects growing in the soil.
生産家のご主人も、喜び、若い学生が、有機茶栽培に魅力を感じてくれたことに喜ばれていました。
そして、喜多重左衛門も自然破壊が進まずに、安定した,優良宇治抹茶が生産される安ど感を得ました。
持続可能な社会に向けて、動き出しました。
The owner of the producer was delighted and pleased that young students found organic tea cultivation so appealing.
Kita Jyuzaemon also gained a sense of security that the destruction of nature would not continue, and that the production of high quality Uji green tea would be stable.

持続可能な社会に相反するお茶業界の例は、多分ペットボトル飲料の出現でしょう。私が外国で経験、認知した容器は、ガラスボトルでした。それは再生可能である条件、体に悪影響を及ぼすホルモンへの影響を考慮して、ガラスボトルが使用されていました。
片や、日本では、消費者が手軽に持ち運べて、割れる心配もない、ペットボトルの製造コストが低価格である点で、ペットボトルが使用されて、あっという間に販売されました。今や、お酒もペットボトルに入っています。
喜多重左衛門ではこのような社会の変化を食い止めるためにも、渾身の宇治有機栽培で製造された、宇治有機抹茶の一片のお茶の粉末も無駄にしないようにと、抹茶ペーストの技術に出会った時には、感動がありました。
An example of the tea industry in conflict with sustainability is perhaps the advent of plastic bottled beverages. The container I experienced and recognized in foreign countries was the glass bottle. Glass bottles were used because of the conditions that it was renewable and its impact on hormones that harm the body.
On the other hand, in Japan, PET bottles were used and quickly sold because consumers could easily carry them, there was no fear of them breaking, and the manufacturing cost of PET bottles was low. Nowadays, alcohol is also available in PET bottles.
At Kita Juzaemon, in order to stop this social change, we were very impressed when we came across the technology of matcha paste, so that not a single piece of tea powder of Uji organic matcha, produced with our best efforts in Uji organic cultivation, would go to waste.
