豆乳で作るシュクメルリ風アレンジレシピ

 夏の家族旅行で出会った「シュクメルリ」。ホテルのビュッフェでひと口食べた瞬間、「なにこれ、美味しい!」とプチ盛り上がりしたあの味が、忘れたころにやってきました。

 そんな思い出の味を、まさかおうちで再現できる日が来るなんて。先日、スーパーで、Oisixでシュクメルリのキットが、30%OFFになっていました!

 キットを開けると、レシピには「ご家庭で用意するもの:小麦粉・牛乳」の文字が。

 「まあ、なんとかなるでしょ!」ということで、小麦粉は省略、牛乳の代わりに常備している豆乳で作ってみることに。また、ひとみアレンジとして、アボカド入りです。

 結果は...? 美味しくできました!

👩‍🍳 作り方(豆乳ver.)

① 野菜の下ごしらえをする

※さつまいもは耐熱容器に入れてラップをかけ、電子レンジ500Wで1分半〜2分ほど加熱しておくと、煮崩れせず扱いやすくなります。私はシリコンスチーマーに入れました。

② 鶏肉を焼く

③ 豆乳&具材を加える

玉ねぎ・しめじ・さつまいもを加えて軽く炒める。

④ 煮込む

⑤ 仕上げる


🌿 Point|小麦粉なしでも美味しく仕上がる理由

 ちなみに、シュクメルリは、ジョージア(旧グルジア)料理です。

ジョージア語で「シュクメルリ(Shkmeruli / შქმერული)」と書かれ、ジョージア西部の「シュクメリ村(Shkmeri)」が発祥と言われています。

 小麦粉なし、豆乳でも美味しく仕上がりました! ライス(白米と玄米ミックス)との相性もとてもよかったです。在るもので簡単にできます。寒くなってきましたので、秋の食材と一緒にいかがでしょうか?



Soy Milk Shkmeruli – My Home-Style Twist

During our family trip this summer, we discovered a dish called Shkmeruli at a hotel buffet. The moment I took a bite, I exclaimed, “What is this?! It’s so good!” and we had a mini celebration at the table. I never imagined that one day, I’d be able to recreate that taste at home.

And then—an unexpected opportunity. I found a discounted Oisix Shkmeruli kit, 30% off at the supermarket!

The recipe card inside said:

“What you need to prepare at home: flour and milk.”

My thoughts were: “We’ll manage somehow.”

So I skipped the flour, replaced the milk with the soy milk I always keep at home, and added one more Hitomi-style twist—avocado.

The result?

Delicious. Total success.


🧺 Ingredients (Serves 2)

Chicken thigh … about 240 g (bite-sized pieces)

Sweet potato … 60 g

Onion … 40 g (thinly sliced or minced)

Garlic … 1 clove (minced)

Shimeji mushrooms … 60 g (trim and separate)

Parsley or Italian parsley … 1 g (for garnish)

Chicken stock powder … about 1 tsp

Grated garlic … 1–2 tsp (optional, for more kick)

Shredded cheese … 1 handful

Lemon juice … 1–2 tsp

Walnuts … as needed (roughly chopped)

Paprika powder … a pinch (optional, for color)

Avocado … optional, added at the end


👩‍🍳 How to Make It (Soy Milk Version)

① Prep the vegetables

Cut sweet potato into 1 cm cubes and briefly soak in water.

Microwave (500W) for 1½–2 minutes to soften slightly.

Slice onion, mince garlic, and separate shimeji mushrooms.

Cut avocado right before serving to avoid discoloration.

② Cook the chicken

Heat a little oil in a frying pan. Add 1 clove of minced garlic and cook over low heat until fragrant.

Add chicken and cook for 3–4 minutes on medium heat until golden. Flip and cook the other side.

③ Add veggies

Add onion, mushrooms, and sweet potato. Lightly sauté.

④ Simmer with soy milk

Pour in 200 ml soy milk, add chicken stock, a small knob of butter or olive oil, and grated garlic.

Simmer over low to medium heat for about 5–6 minutes. Soy milk burns easily, so don’t use high heat.

The sweetness of sweet potato and the chicken juices naturally thicken the sauce.

Add shredded cheese and stir until melted.

Just before turning off the heat, add avocado, walnuts, and lemon juice.

⑤ Serve

Plate it, garnish with parsley, and sprinkle paprika powder or black pepper if you like.
