かまぼこ八兵衛 海老名SA店｜Kamaboko Hachibei in Ebina Service Area

日本一の集客数を誇る海老名上りサービスエリア内にある蒲鉾などを販売する店舗のリニューアル。既存店舗の状態がさほど傷んでいなかったため、可能な限り既存什器や仕上げを残しつつ集客に直結するポイントに絞って改修を行なった。「かまぼこ八兵衛」という名前の知名度が低いので、それよりも取扱商品の有名メーカーの名前がサインとして目立つよう暖簾にてアートワーク的に仕立てた。暖簾により日本食のイメージを醸すだけでなく、取扱メーカーが変わった際も従業員の手で簡単に交換できる利点がある。また、買い回りの動線、店舗全体の視線の抜けが悪かったので、什器移動により整理を行なった。照明デザイナーとのコラボレーションにより、店舗全体の色温度や照度バランスを整えた。この改修により、前年比売上を上回る水準で推移している。

This is a renovation project for a food shop specializing in Kamaboko fish paste in the Ebina Service Area, which is the most popular in Japan. Since the shop was in relatively good condition, I wanted to leave some of the existing fittings and décor. I changed the position of some refrigerated fixtures to improve traffic flow through the shop, and create better line of sight all the way to the end of shop. Since the shop name “Kamaboko Hachibei” was unknown, I designed artwork using traditional Japanese signage “Noren” incorporating famous “Kamaboko” makers logos. I collaborated with a lighting designer to control color temperature and provide appropriate illumination.
