Restaurant-Style Chana Dal Recipe
This rich and flavorful restaurant-style chana dal is creamy, mildly spiced, and finished with a smoky tempering. It pairs perfectly with rice, jeera rice, roti, naan, or paratha.
Ingredients
For cooking the dal
1 cup Chana dal
3 cups water
½ tsp turmeric powder
1 tsp salt (or to taste)
For the masala
2 tbsp ghee or oil
1 tsp cumin seeds
1 bay leaf
1 medium onion, finely chopped
1 tsp ginger-garlic paste
2 tomatoes, pureed
2 green chilies, slit
½ tsp red chili powder
1 tsp coriander powder
½ tsp cumin powder
¼ tsp garam masala
Salt to taste
For the final tempering
1 tbsp ghee
3–4 garlic cloves, sliced
1 dried red chili
½ tsp cumin seeds
1 tsp Kasuri methi, crushed
Fresh coriander leaves, chopped
Instructions
Wash the chana dal thoroughly and soak it for 30–45 minutes.
Pressure cook the dal with water, turmeric, and salt for 4–5 whistles (or until soft but not mushy).
Heat ghee in a pan. Add cumin seeds and bay leaf. Let them splutter.
Add onions and sauté until golden brown.
Stir in the ginger-garlic paste and cook until the raw smell disappears.
Add tomato puree and green chilies. Cook until the oil separates.
Mix in the red chili powder, coriander powder, cumin powder, and salt. Cook for 2–3 minutes.
Add the cooked dal and simmer for 8–10 minutes. Mash a small portion of the dal with the back of a spoon to make it creamier.
Add garam masala and crushed kasuri methi. Mix well.
Garlic Tadka
Heat 1 tablespoon ghee in a small pan.
Add cumin seeds, sliced garlic, and the dried red chili.
Fry until the garlic turns golden.
Pour the hot tempering over the dal immediately.
Garnish with fresh coriander.

Use ghee instead of oil for authentic restaurant flavor.
Slightly mash the cooked dal to achieve a creamy texture.
Add 1 tablespoon of butter or 2 tablespoons of fresh cream at the end for extra richness.
A squeeze of lemon before serving brightens the flavors.
